Another two week plan - that seems to make it a bit easier for me. Lots of quick and easy - Tom will be traveling for a missions trip, my parents will be arriving for a short visit and we'll all be leaving for vacation in less than 2 weeks. I'm not sure how the second week will shake out with all the craziness, but I at least want to have some options in place.
I'll still be meal planning on vacation, though, since I was voted summer chef at my parent's house. The homemaking binder will be going with me on our train trip so we can plan out meals and I'm crossing my fingers that I can remember how to cook for a big group!
Monday - chicken fajitas, corn, homemade corn tortillas
Tuesday - pork chops, roasted potatoes, broccoli
Wednesday - hamburgers, fruit, salad
Thursday - teriyaki chicken, brown rice, squash
Friday - pulled pork sandwiches (will share recipe this week)
Saturday - pancakes, bacon, cantaloupe
Sunday (Tom leaves for Bahamas) - fried brown rice
Monday - hot dogs, watermelon
Tuesday - *homemade taquitos and black bean dip
(*mix shredded chicken with salsa and shredded cheese, roll in corn tortillas and bake until crispy/melty at 350)
Wednesday - kid's choice!
Thursday (Mom & Dad arrive) - eat out
Friday - easy chicken cacciatore, pasta/brown rice, salad
Saturday - tacos, black beans
Sunday (Father's Day, day before vacation) - eat out or grill

Angie, if I didn't have my homemaking binder and keep an inventory of my freezer, I know I couldn't do a 2 week menu! Sometimes, I feel like it's a little too obsessive even for me, but it really does seem to help.
