Can I share a confession?
I am sooo thankful September and October are over.
They were two of the most stressful, chaotic months I can remember. I know I have no guarantees that November will be better, but it feels a little more settled...a little more hopeful...a little more organized. Plus, there's always Thanksgiving at the end of the month, and I've still got a few recipes I need to pull together in the next week or two.
Here's the meal plan for this week:
Monday
Mongolian Beef
Brown Rice
Still working on the recipe I tried last week - it was good, but not great and seriously lacking in spice. If I'm happy with tonight's version, I'll share it tomorrow.
Tuesday
Basic Baked Chicken
Mashed Potatoes and Gravy (made with tapioca starch or cornstarch instead of flour)
Squash and Onions
Wednesday
Eat at church
Thursday
Pork Chops
Garam Masala Candied Carrots
Baked Macaroni and Cheese
The carrots are a recipe I'm working on for Thanksgiving. I'm hoping they'll be ready to share later this week or next. And the mac and cheese is something that came to me the other night...at about 2 am. It's a combination of a few other recipes, with brown rice pasta. If it isn't a colossal failure, I'll try to get it shared soon.
Friday
Chipotle Chicken Chili
Cornbread
Still looking for a gluten-free cornbread that I love - any suggestions?
Saturday
Chili Nachos
Layer that leftover chili with corn tortilla chips, cheddar cheese, olives, a few jalapenos and broil. Top with sour cream and enjoy!
Sunday
Vegetable Fried Brown Rice
